High Fiber May Cut Marker for Inflammation/ CRP
High fiber intake, from the diet or from fiber supplements,
significantly reduced levels of a protein that is associated with inflammation, diabetes and heart disease, say scientists, giving yet more support for high fiber diets.

C-reactive protein (CRP) is produced in the liver and is a known marker for inflammation. Increased levels of CRP are a good predictor for the onset of both type-2 diabetes and cardiovascular disease. "The results of the current study demonstrate that a diet high in fiber (near 30 g/d), whether achieved naturally or from supplement, can reduce levels of CRP," wrote lead author Dana King in the Archives of Internal Medicine. The new randomized crossover intervention study, by researchers from the Medical University of South Carolina.

Foods highest in fiber are as followings:
Beans (12-15 grams per serving)
Whole grains - including flax seeds (4-11 grams per serving)
Nuts (2-4 grams per serving)
Brown or wild rice (2-4 grams per serving)
Apples and other similar fruits (2-4 grams per serving)
Potatoes - with skins, yams (2-4 grams per serving)

GOAL: 30 grams daily (more is OK)
Average American intake: 11 grams (or less)

Women's Heart Risk Falls as Flavonoid Intake Rises
Study adds cardiac and life-saving benefits to plant foods' role in curbing breast cancer

Studies show a higher intake of flavonoids from vegetables and fruits reduce risk of breast cancer. Now studies also show that high flavonoid intake reduces risk of death from cardiovascular disease, coronary heart disease, or stroke. After analyzing data from 34,489 post-menopausal participants in the Iowa Women's Health Study, researchers at the University of Minnesota and the University of Oslo, Norway determined that the women with the highest intake of certain classes of flavonoids had less risk of death from heart disease and all other causes.

Flavonoids appear to act as antioxidants - either directly or indirectly -- thereby helping to foil a key cardiovascular risk factor: oxidation of LDL cholesterol. Flavonoids also inhibit inflammation in the blood and arteries, improve the performance of our artery lining, and keep blood from becoming sticky and overly clot-prone (i.e., they inhibit platelet aggregation).

The best food sources, in rough order of flavone content, are parsley, peppermint, thyme, marjoram, sage, celery, celeriac, artichoke, and chili peppers. Eat a range of vegetables, herbs, and fruits, as all the flavonoids are beneficial.

They reported finding significant inverse associations in two instances:
• Anthocyanidins (berries and cocoa/chocolate): Eating any amount, compared to none, reduced a woman's risk of CHD, CVD, and total mortality by 12 percent, nine percent, and 10 percent, respectively.
• Flavonones (citrus fruits and peppermint): Women consuming the most of these flavonoids reduced their risk of CHD and death by 22 percent.
Certain flavonoid-rich foods were associated with significant reductions in risk of heart-related deaths:
• Strawberries reduced the risk of death from CVD.
• Chocolate reduced the risk of death from CVD.
• Bran (added to foods) reduced the risk of death from stroke and CVD.
• Apples or pears or both and red wine reduced the risk death from of CHD and CVD.
• Grapefruit reduced the risk of death from CHD.
No associations were found between flavonoid intake and risk of death from stroke

Coffee Cuts Diabetes Risk

HELSINKI, Finland—Coffee continues to get good and bad press coverage, but a recent study published in the European Journal of Clinical Nutrition
(Epub March 7, 2007)
details an inverse association between higher coffee intake and incidence of type 2 diabetes.

In the trial, 21,826 Finnish men and women 35 to 74 years of age and with no history of diabetes were followed from baseline—1982, 1987, 1992 or 1997—until one of three events occurred: onset of type 2 diabetes, death or the year 2002. Specifically, researchers monitored coffee consumption and serum gamma-glutamyltransferase (GGT), a liver enzyme that maintains cellular glutathione concentrations and is used as a biomarker to indicate damage, especially oxidative. They divided the study population into two groups relative to GGT, using the 75th percentile as a cut-off point.

Results showed coffee consumption was significantly and inversely associated with incident diabetes among both men and women. The inverse association was most significant in those subjects who also had GGT levels higher than the 75th percentile, especially among women and both sexes combined. However, the association was not significant among those below the 75th percentile of GGT levels.

The researchers concluded, “Habitual coffee consumption is associated with lower incidence of type II diabetes, particularly in those with higher baseline serum GGT levels.”

More Fiber in Coffee Than Orange Juice?
Coffee, a well-established source of antioxidants, may also be a richer source of soluble dietary fiber than orange juice, researchers report. "The dietary fiber content in brewed coffee is higher than in other common beverages such as wine (0.14 per cent) or orange juice (0.19 per cent)," stated the researchers. Coffee, one of the world's largest traded commodities produced in more than 60, continues to spawn research and interest, and has been linked to improved cognitive performance and reduced risks of certain diseases, especially of the liver and diabetes.

Writing in the Journal of Agricultural and Food Chemistry, authors Elena Díaz-Rubio and Fulgencio Saura-Calixto from the Department of Metabolism and Nutrition at Madrid's Instituto del Frío, state that, while it is known that coffee beans contain dietary fiber, no study had ever investigated the presence of dietary fiber in coffee beverages. Indeed, food composition tables list coffee as containing zero dietary fiber.

In the new study, the researchers used a special technique for measuring dietary fiber in beverages and reports that brewed coffee contains between 0.47 and 0.75 grams of soluble dietary fiber (SDF) per 100 millilitres of beverage, which would equate to between 2.54 and 20 per cent of the powdered coffee bean. Interestingly, instant coffee contained more SDF (0.752g/100mL) than espresso or filter coffee (0.65 and 0.47 g/100mL, respectively).

Díaz-Rubio and Saura-Calixto state that a significant part of the antioxidant activity of coffee (between 87 and 105 mg/100mL) is associated with the dietary fiber content. "This suggests that a fraction of the antioxidant polyphenols from coffee is bioaccessible in the small intestine, whereas the part associated with dietary fiber (30-51 per cent) will be bioaccessible in only the large intestine after fermentation by colonic microflora," they said.

Pet food recalled after kidney failure, deaths
• Recall of wet pet food made by Menu Foods for Wal-Mart, Kroger, PetsMart, others
• Recall affects specific sizes of Iams and Eukanuba brands of dog, cat food

WASHINGTON (AP) -- A major manufacturer of dog and cat food sold under Wal-Mart, Safeway, Kroger and other store brands recalled 60 million containers of wet pet food Friday after reports of kidney failure and deaths.

The recall covers the company's "cuts and gravy" style food, which consists of chunks of meat in gravy, sold in cans and small foil pouches between December 3 and March 6 throughout the United States, Canada and Mexico.

Proctor & Gamble announced the recall of specific 3 oz., 5.5 oz., 6 oz. and 13.2 oz. canned and 3 oz. and 5.3 oz. foil pouch cat and dog wet food products made by Menu Foods but sold under the Iams and Eukanuba brands. The recalled products bear the code dates of 6339 through 7073 followed by the plant code 4197, P&G said.

Menu Foods' three U.S. and one Canadian factory produce more than 1 billion containers of wet pet food a year. The recall covers pet food made at company plants in Emporia, Kansas, and Pennsauken, New Jersey, Henderson said. Henderson said the company received an undisclosed number of owner complaints of vomiting and kidney failure in dogs and cats after they had been fed its products. It has tested its products but not found a cause for the sickness.

Place In the crock pot: (amounts are all estimates)
1-2 lbs organic ground beef or turkey legs or thighs
2 cups chopped celery
1 1/2 cups chopped carrots
32 oz. organic beef or chicken broth
3 cups water
1/8 cup olive oil
dash of sea salt (for minerals) or dash of Bragg's aminos
Plus any other misc. vegetables I have around, broccoli, squash, peas, etc.)

Sometimes I add rosemary, sage or basil, sometimes I add stewed tomatoes.
Cook on high for 4 hours or low for 7-8 hours.

Before refrigeration, there was no such thing as "dog food." Leftovers were given to the dogs because it wouldn't keep for long. Cats also, I am quite, sure fed on mice and other unwanted critters. With refrigeration, people needed something to give to their pets.... and along came "pet food" and pet food companies.
